Directions:
1. Heat up a cooking pan at medium heat.
2. Add 2 tbsp Massaman Curry paste into the pan and stir for half a minute.
3. Add 1 can of coconut milk into the pan and bring to a boil.
4. Add vegetables and bring to a boil, making sure the potato is well cooked.
5. Add the vegan meat of choice or tofu and bring to a boil.
6. Add the peanuts.
7. Season to taste with the salt and palm sugar.
8. Garnish with fresh chilli and serve with rice. Serves 2.
